Carrots Carrots are not just for rabbits and horses, though these critters certainly appreciate their crunchy goodness. Carrots contain beta carotene, which is converted by the body to Vitamin A. This vitamin helps develop and maintain healthy vision and may be beneficial to blood sugar regulation. Carrots are also a good source of Vitamins C and K, fiber and potassium. Daucus Carota is related to parsnips, dill, fennel, cumin and caraway. For an easily grown garden crop, plant a packet of carrot seeds. The hard part (after selecting a variety and loosening the soil) is thinning the delicate little seedlings. But the harvest of beautiful, fully-grown carrots is worth it. Carrots hail from central Asia and the Middle East. Did you know, they haven’t always been orange? The Dutch developed the orange hue (from purple or red varieties) in the 1500’s. Somewhere along the line, carrots escaped cultivation and became the wild carrot, or Queen Anne’s Lace. Clean carrots with a vegetable brush, but avoid peeling or scraping them, since the mineral contents lie close to the skin. The tops are edible and should be removed before storing the roots. Carrots can be stored in a cool place for as long as 4-6 months. You can also freeze or can them, of course. Carrots do not lose nutritional value during cooking. So eat them raw or cooked, and pair them with whole grains for delicious, healthful, colorful dishes.
