Sign up for FanHouse Fantasy Football today. 11 July 2008 Greetings! A few weeks ago, while in San Francisco, I went to a little restaurant in the the middle of the afternoon. Between lunch and dinner they served tea, desserts, and a "Vegetarian Nibble Plate" that included, among other things, a small wide-mouth glass jar of goat cheese, with a pool of honey on top. I spread the cheese and honey on top of the crisply toasted bread, topped it with a pile of the greens dressed lightly with olive oil and balsamic vinegar, and sprinkled it with coarse sea salt. Yum! My version made at home is a fiber rye cracker (you could also use toast of any kind), spread with goat cheese and drizzled honey, topped with a chiffonade of greens dressed with olive oil and your favorite vinegar, AND/OR fresh herbs of various sorts, single or mixed (such as basil leaves or chives with chive blossoms), sprinkled with coarse natural salt. It was great with lentil soup.
