Make Mine a Mango by Leanne Ely, C.N.C. My grocery store was having a sale on mangos and I just couldn’t help myself…I had to get a few! These wonderful, succulent gems are just too delicious to pass up. And when you add to the equation the health benefits, how do you say no? Mangos taste like the love child of pineapple and peaches, don’t they? Their slurpy goodness begs to be made into a delicious salsa (I make mine with fresh mango, tomato, red onion and cilantro and spoon it generously over grilled fish, mmm!) or just opened up and eaten over a kitchen sink. Mangos are filled to the brim with vitamin C and beta-carotene, making them powerfully rich in antioxidants, which helps your body fight cancer, heart disease and a whole host of other maladies. Not only that, but the fiber content is positively bursting at the seams; 6 grams of fiber per mango! That’s awesome! Eating a mango can be a challenge. Here are some hints to help you navigate your way to tropical deliciousness-- 1) Slice the top and bottom ends off the mango so you can stand it up. The pit is big. You want to be able to expose it thru the cut. 2) Now cut off the mango flesh parallel to the pit; almost like you’re peeling a potato, keeping the skin in tact. 3) Once you’ve removed the peel and mango, on the peel side down; cut criss-cross cubes thru the flesh, stopping at the skin. 4) Turn the peel inside out, so to speak, so the cubes stand up and they’re easy to bite or fork off. Luckily they needed to be pureed anyways for my daughter, but it was still so messy! Guest guest Posted June 13, 2008 Report Share Posted June 13, 2008 I love mangos!Great breakfast...I have one in my fridge waiting on me now... think I will have half for breakfast today... maybeI just try to slice it up. I have gotten to where I can cut it flush against the widest part of the pit, so that I have almost one half of it off. Then I will slice that, leaving the skin on. I love to eat it off of the skin, kinda like you would see people stranded on a island somewhere do. When I get around to eating the half with the pit, I like to save the pit for last, and suck and chew any remainders off of it. It's flesh is toughest there, but it is super yummy!
