Thanks, Ruth! That's really not a lot of champagne, is it? Just enough to give it a good flavor, I'd guess. I'll keep this in case I work up the courage to can this year, lol!

Her is the recipe for Strawberry Champagne Jam. It is very easy to

make. For those who avoid alcohol, you can substitute sparkling grape

STRAWBERRY CHAMPAGNE JAM

 

You needn't buy expensive champagne for this strawberry champagne jam,

set as well.

 

4 1/3 to 4½ cups strawberries

1 package pwdered pectin

¼ cup lemon juice

½ cup dry champagne

7 cups sugar

 

In nonreactive pan, combine berries, pectin, lemon juice and

champagne. Over high heat, bring to a rolling boil. Add sugar. Stir

constantly until mixture comes to a rolling boil again. Boil,

stirring, for 1 to 2 minutes.. Process in boiling-water

canner for 10 minutes. Makes about 8 half pints.
