I have wished many times that my family had more of a CHOICE than Whole Foods or Wild Oats (which I shopped at more than Whole Foods), but we just dont. We do, however, have a lively crop of sagebrush that needs to be plucked out of my yard, lol. I guess, too..that reading labels is the best we can do. Speaking of lables, do any of you know of any great enchilada sauce?????? Hope you're all having a great day! Robyn ************** Here's an easy enchilada sauce recipe.....it's called 10 min. Enchilada Sauce(it's more like 25 min. sauce).lol I haven't tried it yet, but I plan on next time I make enchiladas. Of course I'm going to try it using coconut oil, instead of the veggie oil and organic tomatoes until I can find local tomatoes(I'm in PA). If you don't use reg. flour, you can sub. whichever kind of flour you do use. I also plan on grating onion and using sea salt instead of the onion salt. It only makes 6 servings so I'll probably make at least a double batch, as it should keep in the frigde for awhile. sluggy 10 MINUTE ENCHILADA SAUCE PREP TIME 10 Min COOK TIME 15 Min READY IN 25 Min SERVINGS & SCALING Original recipe yield: 6 servings USMETRIC INGREDIENTS 1/4 cup vegetable oil 2 tablespoons self-rising flour 1/4 cup New Mexico or California chili powder 1 (8 ounce) can tomato sauce 1 1/2 cups water 1/4 teaspoon ground cumin 1/4 teaspoon garlic powder 1/4 teaspoon onion salt salt to taste DIRECTIONS Heat oil in a skillet over medium-high heat. There was actually a big sale here in town...they had all natural/hormone/antibiotic free whole chickens for 58 cents/pound, so of course I went and bought a ton of them. They're building one near me now, which will be great, as the co-op is a bit of a hike to get to. And I don't always plan well to rely on veggies from the farmers markets. Sometimes you just want somewhere to go to get something you need! Nugget even sells raw milk-but not raw butter, they sell Nancy's organic cottage cheese-but not Stevia, etc. etc. I love how Nugget has Boars Head lunch meat. I don't eat it, but the family does, and that is probably the best quality lunch meat out there. So I go to both places. It'll be nice when the Whole Foods in Roseville opens, then both places will be close. Still have to hike down to Sac for the food co-op though, lol. She was living in Alaska & had to have a quintiple bypass, so couldn't live alone any more. She's much more convalescent than I thought she'd be, so it's been a challenge for both of us. Hopefully this phase will pass soon and we can settle down to just being housemates. How are you doing? Thanks for the tip about the lunch meat. Somehow I just can't quit give up that bad habit. I don't get to Nugget as often as I'd like to, but it is a wonderful store. I LOVE to get one of their made-to-order salads as a treat for dinner -- somehow what they do is so much better than what I make up. I know it's all in my head, but .... theirs really tastes better to me. Whole Foods is going to be a temptation to me -- they carry some really killer scones: blackbery (oh yum! my favorite flavor!) by Sconehenge. When they're all the way across town it's not so much of a temptation ... Stevia has a bit of an aftertaste for me -- I was using it in oatmeal but didn't like the taste. It does fine in yoghurt & fruit smoothies though. Recently got a bottle of Blue Agave juice, which seems to have less aftertaste, & is of the consistency that I can substitute it for honey in recipes. Trader Joe's had an oatmeal & flax variety, & the flax sweetened it enough that I didn't need any extra sweetener. Unfortunately, when I looked for it again it was gone. Hope she gets back on her feet soon. I know you'll be a good influence on her to eat better, exercise, and take care of herself. It took me a long time to give up the lunch meat habit, lol. But I thought it important, so I gradually phased it out. The Nugget salads look pretty good. I always check them out, but I've never tried them. I'll keep it in mind for when I don't have time to make my own for lunch. Those Whole Foods scones are wonderful, I've had them several times too, lolol. Just an occasional treat for me these days, lol. But they are sooooo good with cream cheese, lol. I used to not like Stevia too. But after I gave up sugar, I found I could tolerate it with no problem. When I was using it along with other sweeteners, I didn't like it. I'm not convinced on the Agave syrup yet, so I'm not using it. I think there's some evidence that it's refinement makes it suspect for our health. I still prefer honey, which I know has anti-cancer properties and other health benefits. But I'm trying hard to stay away from all sweeteners. :-) Does Trader Joe's not have that oatmeal/flax any more? I've never tried it, but I've seen it there many times. Maybe they were just out? I found a raw honey called Apitherapy, which is raw and has parts of the comb, etc. in it. It is soooooo good, lol. I also put stevia in tea-I alternate them. I know you said you're trying to do without any sweeteners, but if you ever feel you NEED to bake some great stuff, let me know. I have learned to bake so many wonderful things with whole wheat and honey. I made a pound cake Sunday afternoon, after church...my kids and husband thought it was fantastic. So the blue agave stuff may not be optimum, but at least it works as a substitute in recipes. That being said, I'm not as completely off sugar as I'd like to be although I've cut waaaaaay back. Maybe that's my problem with the stevia.I'll look again at TJs for the flax seed oatmeal. I shop at several TJs: there's one at Fulton & Marconi, & another at Sunrise & Madison. Generally though, if one store is out, all of them are.My friend isn't doing well -- she has been unable to eat since her surgery. Everything smells & tastes nasty and she just can't choke food down. The only thing we found she could tolerate was root beer floats -- not the most nutritious meal in the world. She's lost 40# in 2 months!!! She's a large lady (traditionally built, for you #1 Ladies Detective Agency fans), so the extent of her loss isn't readily apparent. No one in her medical care has seemed to be too concerned about it, which makes me mad: if she had been a normal size & then lost 40#, she'd look like a concentration camp survivor and they would have been rushing madly around to do something! She wound up back in hospital last Thursday with fluid on her lungs, & has now been stepped down to a skilled nursing facility. I need to try and find a tv she can use in her room while she's there -- freecycle here I come again!The doctor thinks her anorexia is due to depression, but I think it's more than that. Does anyone have any experience in loss of appetite like this? I think I'd still try to "man" down the stevia though, lol, if it were me. Only because it seems to be a less "processed" product. I've only been to TJ's in Roseville, and I know I saw it there. I sure hope you can find it. Will your friend drink raw milk? That's about the most nutritious thing you can consume. Years ago, Barbara told me a story about a man who had some damage to his esophagus, and subsisted entirely on raw milk, that's how nutritious it is. And if she'll drink it, you could blend it up with some fruit-strawberries, raspberries and blueberries have a lot of health benefits. Bananas too, although they are higher in sugar, they have potassium and such. You can also blend in an organic egg into it, and she'll never notice it. A meal in a glass. :-) Good luck! Please keep us updated. Sounds like your hands are full. When does she come home? I have heard that depression after surgery like that is common. One source gives 92% fructose and 8% glucose; another gives 56% fructose and 20% glucose. These differences presumably reflect variation from one vendor of agave syrup to another. As a sweetener, Agave syrup is notable in that its glycemic index and glycemic load are apparently lower than most if not all other natural sweeteners on the market, due to its high fructose content. I don't have a glycemic index book to check it (although I should) so I can't quote a figure, but it seems to be the best choice if one must have something sweet. I like that you can cook with it -- I'm not sure if you can with stevia. My friend still isn't dong very well. She's in a nursing home now, in Carmichael, so it's a trek over there every day. I've been slipping her Floradix in hopes it would help her anorexia, but so far it hasn't done much. Took over ginger tea bags too. She's eating a bit more but only because she's forcing herself to. She can't get up & down by herself because of the sciatica. Her PT thinks she's too fragile to be able to have DC treatment, or even therapeutic massage. So she's on pain pills, & in misery. And that's not even addressing the CHF or COPD. She's short of breath if she makes any physical movement at all. It's not looking very good overall. I wish I wasn't so worried, & that she was getting better. I certainly wish I wasn't trekking to Carmichael every day, to visit someone & try & make conversation when I was just there yesterday & nothing new has happened. Sigh. This time next year things will all be resolved & we'll be on to new dilemmas.
