Dear Heritage Foods USA Supporter, We are thrilled to announce that Good Shepherd Ranch with Heritage Foods USA has almost sold out of all Heritage Turkeys for 2007. While the 12,000 birds our farmers raised is but a blip on the radar of big agriculture, for the food conservation movement this is a very significant number. In fact, if you consider that the United States has a population of about 300 million, then one out of every 25,000 Americans will receive a Good Shepherd turkey this Thanksgiving. And, if you consider that 12 is the average number of people who attend a Thanksgiving dinner, then one out of every 2,083 people will be eating a true heritage turkey this year! So if you find yourself in a group of more than 2,000 people, ask around, you just might be able to share a heritage turkey story! For those of you who ordered a bird, they will be arriving to you on Tuesday, November 20th via overnight FedEx. We will be emailing customers their FedEx tracking numbers this week (and by Friday you can also visit your order confirmation page to get this number) so you can follow your turkey shipment starting next Monday night, November 19th. A signature release is signed on every package so your box will be left at the door if you are not home. Inside your box is an information page with details about your turkey and includes a code number you can type into our Trace Your Food link on our homepage for even more information: www.HeritageFoodsUSA.com. If you have any emergency questions, please call us at 212-980-6603 anytime, even on Thanksgiving! Your turkey will arrive very cold, not frozen. Just take it out of the box and place it in the fridge and it will be fine until Thanksgiving (though you should freeze it if you plan on enjoying the bird after that day). A good way to know your bird arrived at the correct temperature is to push your finger into the breast, if it gives a bit, but not too much, you're ready to roll. Should you need to get your bird to room temperature quickly just immerse it in cold water for a few minutes. Please visit our site for fun recipes by some of our great chef friends. Regardless of what recipe you follow for your turkey, our general rule of thumb is that the bird is done the second you cut into the meat and the juice runs clear – a ballpark estimate for how long this takes is 12-15 minutes per pound! Keeping a close watch of your bird can prevent overcooking. We recommend a light touch, brining is not necessary. For those of you who heard about us in the recent New York Times article, welcome to the Heritage Foods USA email list! This pig, which gets its name from its red color and the wattle that hangs under the chin, originated in New Caledonia, came to New Orleans in the 18th century and was developed in the forests of Texas. According to the American Livestock Breeds Conservancy, there are fewer than 200 Wattle breeding pigs in the United States. But, like with the turkeys, we have to eat them in order to save them!
