Coconut flour and generally all the nut flours are very good in non-

yeast type breads. These flours have no gluten, the protein in

wheat/barley/oat flours that make a bread chewy and light. In other

words, they cannot be substituted one to one. For a sweet bread,

you can substitute a portion of the regular flour for a nut flour.

 

In other words, if you are wanting to make a sandwich bread, these

flours generally do not work for that purpose. If you do a Google

on " Almond flours " or " SCD " , you will however find some " breads "

using those types of flours. Just know that the end product will be

very different from " regular " bread!

 

If you are using them (nut or coconut flours) in a muffin batter,

you may substitute some of the regular flour, but not all, with the

end result being a slightly heavier product. I add a little extra

baking powder when I do that.

 

You say you're trying to eat better. Adding extra fiber is a good

thing of course, but adding more veggies to the diet, especially

green ones, is also important! Plus you get lots of fiber from

beans, legumes, and whole grains.

 

I found that by using these flours a lot, I was continuing with the

sugar habit....so, ended up just making cracker-type things that you

could dip in hummus, for example, instead of making sweet breads.

Do any of you use coconut flour? I just bought a bag. my husband has

started a new diet and is not eating simple carbs, but complex. like

brown instead of white rice. not using white flour. eating a lot of

grapes. and trying to get me to eat better as well. I don't who said

what to him at work, but we are finally both getting the same

page. :)

Wondered how you like it, if breads taste like coconut as my

daughter

hates coconut. So I don't want to use it a lot if she won't like

anything I make. I saw from this site there is also a macadamia

flour. If you aren't allergic to nuts and aren't serving to

someone

that is, sounds like a good alternative to wheat and gluten in

general. just wondered your thoughts on this.

I was cruising through Wild Oats today and

found out they don’t carry coconut oil or flour. Are they only available

online or has anyone found them in stores?

Wild Oats by me carries both so it must depend on the demand.

I was cruising through Wild Oats today and found out they don’t carry coconut oil or flour. Are they only available online or has anyone found them in stores?

Leslie, I get both at Whole Foods. Have you looked for a food co-op in your area? Or health food stores? I think most areas have health food stores now.
