Using coconut flour

I saw this in the Tropical Traditions newsletter and thought it was interesting:

 

ORGANIC COCONUT FLOUR: BUY 1 GET 1 FREE ENDS SUNDAY!Tropical Traditions organic coconut flour is fiber from the coconut meat after most of the oil has been extracted to make Virgin Coconut Oil. It is certified organic, unsweetened, and has not been treated with sulfites. Tropical Traditions organic coconut flour is high in dietary fiber and protein, and is gluten-free. It has more fiber than gluten-based grains. Tropical Traditions organic coconut flour can be added to standard wheat-based recipes to add extra fiber, by substituting 10-30% of the grain-based flour with our coconut flour. Some recipes, such as muffins and quick breads, can be accomplished with 100% Tropical Traditions organic coconut flour and therefore be 100% gluten-free! (See some sample recipes on our website!) Since organic coconut flour contains natural sugar from the coconut meat, baked goods need less sugar added. The organic coconut flour has a mildly sweet coconut taste!

I have it, I baked with it and the goods came out so-so....

Barbara, did you mix it with wheat flour, or did you use straight coconut flour?Cyndi

Did you see the giraffe? And the rhino rolling in the mud on AC? LOL.

I used it straight. I took the recipes from the web site. I try not to eat grains (unless it is a Hunza bread... LOL)

I didn't take a pci of the giraffe, since there was a problem or something with the lights. It was just by the light of the moon, so he looked like a ghost, lol. Here is a pic of the rhino. They must be having problems at A/C too, because the feed keeps going down there too.

No, I missed them. There was a problem with the AC and the feed froze on the warthog drinking, twice, so I shut it of. Only opened it again not long ago. There is a little antelope there right now.

Do you have pics?

And completely happy to be covered in mud from top to bottom, he even rubbed his face completely with mud, lol. At one point, a Hyena was standing next to him staring at him. they probably wanted to play in the water again!
