(Don't tell him that, don't want to hurt his manly feelings.) ;-)I like to slice them in half the long way, marinate in Italian salad dressing for a few minutes, and then throw them on the grill. Or I cut them up and roast them in the oven with other veggies. Or you can saute them lightly with some other veggies and then toss with warm cooked pasta and a little parmesan cheese, for a light side dish.
