Noah is adorable! (Don't tell him that, don't want to hurt his manly feelings.) ;-)I like to slice them in half the long way, marinate in Italian salad dressing for a few minutes, and then throw them on the grill. Or I cut them up and roast them in the oven with other veggies. Or you can saute them lightly with some other veggies and then toss with warm cooked pasta and a little parmesan cheese, for a light side dish.

Any Indian ghosts prowling the flower beds at night? ;-)Cyndi

Here's my first veggie from my organic garden patch.

It's from a monster sized zuke plant. I put 4 seedlings in Memorial Day weekend in the sunniest spot in the yard-my front flower bed. I measured the monster plant about a week ago and it was 41" across....that was After I pruned it back so the pepper plant next to it could get some sun too.lol

Anyway, this is the quickest we've had anything mature enough to pick and eat.

Anybody got any ideas how I should prepare this baby? I've got another two zukes ready to pick in a couple of days so may hold off til then to prepare them all together as we're feeding 5 here.

Congrats Sluggy!

I like the zukes fried in butter with tomatoes and onions or make it into a little more elaborate ratatouille. Here is a recipe.

There are many more recipes if you google.
