Pasteurized almonds?

Thoughts about the petition? Unfortunately, the law is a done deal. All Almonds will be pasteurized, and many companies are already complying. I read somewhere this morning that small farmstands that sell directly from the tree to the consumer are the only exceptions. I'm hoping I can find a few here in CA, where most of the country's almonds are grown.

 

Nourishing Traditions talks about the importance of soaking all raw nuts before consuming to release the powerful enzymes and make them easier to digest. I think this will become even MORE important as the nutritional content of the Almonds are compromised. Basically, you soak them in salted water, dry them out, and then they can be stored at room temp for many months.

 

I had a thought this morning about nuts imported from other countries. I am wondering if they are also pasteurized. If I hear anything, I'll report back...
