Guest guest
Can you post it, Sluggy? I'd love to see it! :-) Cyndi **************** It's called Honey Wheat Berry Multi-Grain Bread I took a bread machine recipe and adapted it and added my touches. ;-) 1 1/3 Cups Milk 2 T Honey 1 T Coconut Oil 1 tsp salt 1 1/2 cups Bread Flour 1 1/2 cups White Whole Wheat Flour 2/3 cup Wheat Berries (soak overnight-at least 10 hrs.- in water, then drain off water) 1/3 cup Rolled Oats 2 T Milled Flax Seed (you can also use whole flax seeds if you like the taste of them) 2 tsp or 1 package Active Dry Yeast Scald Milk, Coconut Oil. Add Honey & Salt. Let cool to lukewarm. Add Yeast, stir. Let rest for 10 min. Add Wheat Berries, Milled Flax Seed & Oats, stir. Add flours 1/2 cup at a time, mix between adding. Adjust how much flour according to dough consistency, til you have a not too hard/not to soft dough. Coat bowl with oil(coconut or other if you want), form dough into a ball and place in bowl. Cover with towel and let rise til about doubled. Punch down dough, form ball and put into baking pan(s). This makes enough for 2 small loaves OR I make one big loaf in a brownie sized pan(13x9). Cover with towel and let rise again 2 hours or so. Preheat oven to 350 degrees. Bake 30-40 min. for brownie sized pan. It might take less time to bake 2 loaf/bread pans. I check at 30 min. by feel and eye. My last loaf I took out at 30 min. but it could have used 5 more min. Wait til it cooks to cut and eat. This is a heavy dense bread. You know you've eaten something when you eat this.lol Make sure the wheat berries are soaked well! Try eating one after soaking to test whether they are soft enough. When they are ready, they should be chewy but not break a tooth.lol
