I haven't tried Bison, but Kail and the kids like it. It's supposed to be very lean and tasty. I just can't bring myself to eat it, lol.

I don't mind supporting organic farmers, and don't forget you can only use so many animals per acre on a pasture-only diet. Beef is cheap because they've stopped pasturing them. And I guess bison is still considered an "exotic" meat, not mainstream, so that raises the price...

Bison are on the pasture, don't need any care, don't need any extra foods like grains. All the owner does is walk out with the gun and shoot it. Transporting the animal is the same as any steer and butchering it also is the same as any steer. Nothing extra.
