I haven't tried Bison, but Kail and the kids like it. It's supposed to be very lean and tasty. I just can't bring myself to eat it, lol.

I don't mind supporting organic farmers, and don't forget you can only use so many animals per acre on a pasture-only diet. Beef is cheap because they've stopped pasturing them. And I guess bison is still considered an "exotic" meat, not mainstream, so that raises the price...
