Thanks Ellen -- I've been doing a lot of this for years. I'm commited

to having my house & property be a toxic-free zone. It's nice to see

others staring to work towards that goal too.

We seem to be fellow travelers on the environmental issue -- nice to

meet you!

Speaking of which, how are you and Marty doing on switching over to cast iron pans, Ellen? I haven't heard you talk about it in a while and there are no updates on your website. I am curious since I plan on switching over and I need advice on how to care for them and keep them non-stick. Roman says his food used to stick all the time, but he also washed them in soap and water (which I understand is a no-no!), but I've read that with proper seasoning and care they are practically non-stick. This is my objective...to cook stick free, heehee.

Also, I know you were looking into woodstove cooking. Do you have a woodstove yet, and if so, are you doing any cooking in it? Just wondering what it's like...

We've completely switched over to cast iron & stainless steel. I just made myself a whole wheat tortilla in one of the cast iron pans a few minutes ago :) If a cast iron pan is seasoned properly, food won't stick. Mine aren't perfect but I'm getting there. As far as cooking on the woodstove, we have a woodstove for heat but not a wood cook stove so I am limited in some ways. About all I've done so far is make tea on it LOL but I do want to try to actually cook on it. I'm just not sure what to cook yet.Ellen LaFleche-Christian Lilac Hill Homestead / Vermont http://tinyurl.com/lpfaf

Ellen,

How about a stew or soup? Those are great on a woodstove.

We lived in a tiny house(the shoebox we called it)in a largely undeveloped

gated community in the Poconos outside Milford, PA from '86-'00. Had 1.3

acres of mostly hilly, rocky land. Being newlyweds with 1 income we found

out quickly we couldn't afford the electric heat in our house(not to mention

that fact that the power went out during winter storms on a regular basis),

so we put in a woodstove after the 1st winter there. We heated the whole

house with that thing(and help from a ceiling fan to circulate the heat)

until 1997 when I developed a severe allergy to trees and we had to limit it

to occasional use or for power outages. I use to cook on it regularly.

Tea, reheating stuff, soups, stews, cooking bacon, burgers, flat meats like

chicken breast/ham steaks/etc. I never got the nerve up to do a roast or

anything.lol The only difficulty is maintaining constant

temperatures....not so hard if you are cooking low and slow like stews but

hard for quick, hot cooking like bacon, steaks, etc.

I bet a braised something or other would be wonderful on the woodstove.....

Whole wheat tortilla? How cool is that! I can't wait to get the cast Iron pans. Got rid of my aluminum pots stuff long ago and switched over to stainless steel. After reading what Cyndi posted about cast iron care, I can see where Roman went wrong...
