Controlling blood sugar aids the body in maintaining weight and helps to lower the risk of heart disease, stroke, diabetes and cancer. Everything you eat has some effect on your blood sugar level. Foods that are made from refined flours or are high in sugar will raise blood sugar faster. Foods that are more complex and take longer to digest will raise blood sugar more slowly. It is these, complex foods that will help keep your blood sugar balanced. Here are five easy ways to positively sway your blood sugar: Add one blood-sugar friendly carb at each meal. These are foods that have a low Glycemic index/Glycemic load value and are typically complex carbohydrates. Some great examples are Whole, Hull-less Barley, Brown Rice, Beans, Bulgur, Lentils, Quinoa, and Oats. Replace foods made with refined grains with those made with whole grains. This can be as simple as switching from white bread to whole wheat bread. Eat a whole grain breakfast. Whole grain cereals, like oatmeal or muesli have an advantage over many popular cold cereals. Not only does the body benefit from the vitamins and protein in whole grains, the fiber inherent to most whole grains will take longer to break down. This will keep you full longer and raise blood sugar more slowly. Cook your pasta al dente. How long you cook pasta, affects how quickly the starches are broken down by the body. Pasta that has been over cooked will break down faster, raising your blood sugar more quickly. As an added bonus, switching to whole wheat pasta will also help control your blood sugar. Eat more legumes. A legume is any type of bean or lentil; this also includes peas and peanuts. Adding these to your meals helps to control the blood sugar because of the complexity of the food. The more work it takes for your body to digest, the slower blood sugar is raised. Legumes can be added to almost any dish- soups, salads, stir-fry. Amaranth Polenta with Wild Mushrooms This delicious recipe comes from "Whole Grains Every Day Every Way" by Lorna Sass. For more recipes and great tips, visit www.lornasass.com. Ingredients: 1/2 oz. (1/2 cup loosely pakced) dried Porcini or other dried mushrooms 1 Tbsp unsalted Butter or Olive Oil 1/4 cup finely chopped Shallots 1 cup Organic Amaranth Grain 1/4 tsp Salt Freshly ground Pepper to taste 1 tsp chopped fresh Thyme Bring water to boil in a kettle, and pout 1 ¾ cups boiling water into a large heatproof glass measuring cup. Stir in dried mushrooms. Cover and set aside until the mushrooms are soft, about 10 minutes. Chop any large pieces. Reserve the liquid. Meanwhile, heat the butter in a heavy 2-quart saucepan. Add the shallots and cook for 1 minute. Stir in the amaranth. Add the soaked mushrooms and soaking liquid, taking care to leave any grit on the bottom of the cup. Bring to a boil. Reduce heat, cover and simmer for 15 minutes. Stir in the salt, pepper and thyme. Continue simmering, covered, until the mixture is porridgy and the amaranth is tender, 10 to 15 more minutes. (Tender amaranth will still be crunchy, but shouldn’t taste hard or gritty.) Stir in a bit more boiling water if the mixture becomes too thick before the amaranth is done. Spoon onto plates in a puddle and place broiled chicken or grilled tofu on top. Alternately, serve in small bowls with a sprinkle of thyme on top as a side dish. Serves 4 Coconut Amaranth Pudding This pudding is delightfully sweet and reminiscent of rice pudding. Ingredients: 1 cup Organic Amaranth Grain 3 cups Milk (Soy, Rice, Cow) 1 cup Coconut, Shredded 1/3- 1/2 cup Honey (depending on desired sweetness) 1 tsp Sea Salt 1 tsp Vanilla Extract 1. Heat milk in a large saucepan, slowly, until scalded. 2. Add remaining ingredients to milk, and then pour into an oiled casserole dish. 3. Bake at 350°F for 60 minutes, until amaranth is tender. 4. Serve hot or cold. Top with whip cream if desired. Serves 8 Banana Nut Cake A delicious gluten and dairy-free cake. Ingredients: 1/4 cup Nuts, finely ground 1-1/2 cup Banana, mashed 1-3/4 cup Amaranth Flour 2 Tbsp. Lemon juice 1/2 cup Arrowroot Starch 1/4 cup Oil 1/2 tsp. Sea Salt 1/2 cup Honey 2 tsp. Baking Soda 2 Eggs 1/2 cup Nuts, coarsely chopped 1 tsp. Vanilla Preheat oven to 350°F. Grease 9" baking dish. Grind nuts in a blender to fine grind. Add to remaining dry ingredients in a large mixing bowl, and add coarse nuts. Without washing equipment, combine remaining ingredients in blender and process 30 seconds. Pour liquids over dry mixture and stir, but do not beat. Pour into prepared pan and bake for 40 minutes. Top will spring back when touched in middle and toothpick test will be dry. The name “Kamut” is an ancient Egyptian word believed to mean “Soul of the Earth.” The grain originated in the Fertile Crescent thousands of years ago and its survival can be attributed to local peasant farmers who have kept this amazing grain in cultivation throughout history. It had almost faded to obscurity until it was revived in 1977 by two wheat farmers who recognized the value of this unique grain. The berries are twice the size of wheat berries, higher in protein and have more amino acids. The berries are golden and plump when cooked and have a slightly sweeter flavor than wheat. Kamut® berries are an excellent alternative to brown rice in cold salads, pilafs and other wonderful dishes. The flour can be added to most baked goods and used in place of whole wheat flour one for one. Due to its high protein content, creamy Kamut® cereal is a great way to start your day. French Bean and Berries Salad Ingredients: 2 cups cooked Organic Kamut® Berries 2 cups cooked Flageolet Beans 1 cup Green Onion, chopped 1 cup Tomatoes, diced 2 cups Spinach, chopped Vinaigrette: 1/2 cup Olive Oil 1/4 cup Lemon Juice 2 Tbsp. White Wine Vinegar 2 Tbsp. Dijon Mustard 1/4 cup Shallots, minced 1 tsp. Thyme 1 tsp. Tarragon 1 tsp. Parsley Flakes 1/2 tsp. Sea Salt 1/2 tsp. Black Pepper Soak Flageolet Beans (about 1 cup) overnight. Drain water and rinse off beans. Place beans in pot covered with plenty of water. Bring to a boil; reduce heat to a simmer, placing lid on pot. Cook until beans are soft, about 1 hour. Place Kamut® Berries (about 1-1/2 cups) in a pot and bring to a boil. Reduce heat to a simmer and place a lid on the pot. Cook until berries are soft, about 1 hour. While beans and Kamut® berries are cooking, mix vinaigrette ingredients together in a large bowl. Slice veggies and place in the bowl. Drain beans and berries and rinse in cold water. Measure out 2 cups of each- the beans and the Kamut® berries- and add them to the other ingredients in the bowl. Blend together all ingredients with vinaigrette and chill for a few hours or overnight. *Any whole grain or combination of grains can be used instead of the Kamut® Berries in recipe, such as Whole Oat Groats, Hull-less Whole Barley, Wheat Berries, Long Grain Brown Rice or Spelt Berries. Kamut® Cherry Crumb Breakfast Cake contributed by Marylin Bahnmiller Ingredients: 2 cups Organic Kamut® Flour 1-1/2 cups Sugar 1 Tb Baking Powder 1 tsp Salt Crust: 1 cup Unbleached White Flour 1 Tb Active Dry Yeast 2/3 cup Warm Water 2 large Eggs, beaten 1 Can Cherry Pie Filling Icing: 1 cup Powdered Sugar 2-4 Tb Milk Topping: 1/4 cup Sugar 1/4 tsp Cinnamon 6 Tb Butter, softened Preheat oven to 350°F. Lightly grease a 9" x 13" baking pan, set aside. In a medium bowl mix together the first four ingredients (Kamut® flour through salt). Reserve 2-1/2 cups (set aside). Combine the remaining Kamut® flour mixture with the white flour, yeast, water and eggs. Mix by hand for 2 minutes. Let rest for 5 minutes. Spread batter evenly on the bottom on the prepared baking pan. Spoon cherry filling evenly over batter, set aside. In a bowl, combine the remaining Kamut® flour mixture, sugar, cinnamon and butter with a fork until crumbly. Sprinkle over cherry filling. Bake for 30 minutes. Allow to cool. In a small bowl mix powdered sugar and milk; drizzle over cake. Pharaoh's Muffins Ingredients: 1 Large Egg 1/2 cup Sugar 1/3 cup Margarine 1 cup Unbleached White Flour 1 tsp Baking Powder 1 tsp Baking Soda 1 cup Organic Kamut® Cereal 1 1/4 cups Sour Milk or Buttermilk 1 tsp Salt Preheat oven to 400°F. Mix Kamut® Cereal and milk; allow to stand for 10 minutes. Cream sugar, margarine, and egg together. Add dry ingredients and cereal mixture. Stir until just mixed. Spoon into greased muffin pan. Bake for 15 minutes, or until toothpick inserted in center comes out clean. Makes 12 muffins. Ancient Grains: Millet Barley Millet’s origin can be traced to North Africa, where it has been since prehistoric times. Millet consumption spread to become a staple in Indian and Asian cuisine and found its way into Eastern European diets long before potatoes and corn were introduced. Nearly everyone has seen millet in bird seed blends, but most people have not tried this amazing ancient grain. When people think of barley, they typically think of pearled barley. While pearl barley is a wonderful addition to almost any stew, it is not a whole grain. The precious bran has been “pearled” away to promote a shorter cooking time. Whole Hull-less Barley, however, is the genuine whole grain. It can be used in place of pearl barley in any recipe and will boost the recipe’s inherent nutrient value when used. Barley is truly an amazing grain! It rivals oats for dietary fiber and beta glutcan, which helps lower and maintain cholesterol levels. Like many of our ancient grains, Barley’s origin can be traced back to the Fertile Crescent, where it has been cultivated for more than 10,000 years. Barley played an important role in the diets of ancient Greek and Roman athletes because of the strength it gave them during training. Gladiators were even known as hordearii, which means “eaters of barley.” Beyond whole kernel barley, barley flour makes a great addition to breads, muffins and pancakes. Rolled barley flakes can be used in place of rolled oats in any recipe and make a tasty addition to homemade granola. Barley grits are a great substitute for corn grits and make an excellent breakfast cereal. Staying Active At Bob’s Red Mill, we tout whole grain foods and the role they play in your health and nutrition. However, eating whole grains is just one component to healthy living. Staying active is also an essential part of being healthy. The USDA recommends that adults “engage in at least 30 minutes of moderate-intensity physical activity, above usual activity, at work or home on most days of the week.” They recommend 60 minutes for children and adolescents. Moderate-intensity is any activity that increases your heart rate, like walking. When you think about it, exercise coupled with a healthy diet rich in whole grains and low in saturated fats, can really make a difference in how you look and, more importantly, how you feel. Not only will it help prevent chronic disease, it will also help maintain your weight and promote a healthy cardiovascular system. No matter how busy you feel, there are pockets of time throughout the day where exercise can be added. Including exercise in your daily routine will help manage your stress levels and increase your energy. Some days, getting 30 consecutive minutes of exercise can feel like a real challenge. But those 30 minutes of exercise can be divided up throughout the day into increments; it does not need to be done all at once. Here are some easy ways to increase your activity: Go out for a short brisk walk before breakfast, after dinner, or on a break at work. On any given day at Bob’s Red Mill, you will see our employees taking walks during their break. Not only are they getting active, they are recharging and increasing their productivity. Walk or bike to the store instead of driving (this also saves precious gas money). Park further away from the store when shopping and walk the extra distance. Berries come in almost every color imaginable and have many different flavors and textures. Every region of the United States is home to different varieties of berries. Here in Oregon, we are blessed with abundant crops of strawberries, blackberries, raspberries, cranberries and blueberries. Oregon's humid climate makes for some of the best berry growing country in the United States. Berries have many healthy attributes. Generally speaking, all berries are high in vitamin C and antioxidants and a good source of fiber. Blueberries and cranberries are high in phytonutrients, which help prevent free radicals. Strawberries are especially high in Vitamin C- eating one cup of strawberries will give you the full recommended daily value. Blackberries, raspberries and other similar berries are wonderful sources of dietary fiber and vitamin C. Summer is the best berry time; many people can get them locally grown, which make them affordable and perfectly ripe. Some are even lucky enough to find them in their own neighborhood. But, no matter where you find them, they are a delightful, nutritious addition to any summer menu. Oregon Blackberry Smoothie Oregon is well known for our blackberries and we can't think of a better way to enjoy fresh blackberries than in a refreshing and nutritious smoothie. This recipe can be adapted using different add-ins (like rice bran, or finely shredded coconut) and if blackberries are hard to come by in your area, almost any berry will do! Click here to view this delicious recipe. Breakfast Berry Muffins These scrumptious muffins feature whole grain cornmeal, whole wheat flour and an Oregon favorite—blueberries! Recipe courtesy of Chelsea Lincoln. Ingredients: 1/2 cup Sugar 1/2 cup Applesauce 1-1/2 cups Milk (Soy, Rice or Cow) 1 tsp. Vanilla 2 Tbsp. Oil 2 cups Whole Wheat Pastry Flour 3/4 cup Medium Grind Cornmeal 2 tsp. Baking Powder 1 cup Blueberries (or berry of choice) Mix together sugar, oil, vanilla, applesauce and milk. In a separate bowl, combine flour, cornmeal and baking powder and thoroughly blend together. Combine wet and dry ingredients. When batter is almost blended, add berries. Stir together until just blended, careful not to over mix. Fill greased muffin tins 2/3 full. Bake at 350°F for 20 minutes. Bring to a boil, cover, reduce heat and simmer very gently for 1 1/2 hours. Remove bone, cut off meat and dice. Return meat to soup and add vegetables.
