Hello Everyone,

 

I made this recipe today and it is delicious. I thought maybe someone would like to try it.

I didn't have chicken so made it with turkey. I don't see why this same recipe could not work with other meats, especially with pork.

I discovered that it was too much oil and it was not too hot, but I do like hot foods.

Chicken Curry 4 lbs chicken cut up in small pieces 1/2 cup oil2 medium onion chopped1 medium tomato chopped2 tablespoon Garam masala2 tablespoon curry powder1 teaspoon ground turmeric6 clove of garlic minceSea salt to taste (about 1 tablespoon) In large pan pour oil and place on fire to hot. Put chopped onion and tomato to sauté. In a small bowl mix together Garam masala, curry powder turmeric, salt and garlic. Add a little water (about 4 tablespoon to make a paste. Once onion and tomato are fully cooked, add curry paste and allow to simmer for a few minutes turning constantly or it will burn. Place chicken in pan and turn a few times. Cover and cook for about half and hour on low heat. If it becomes too dry add 1 cup of boiling water and simmer. Once meat is tender and fully cooked it is finished. Served with cooked brown rice or pita bread, this recipe is hot and spicy, if you don’t like too spicy you can omit Garam masala and put ground cumin instead. This is the basic for cooking curry you can play around with the ingredient until you get to your liking.Enjoy!!!

Hola Barbara- My mother used to fix chicken like your that! I have kept some of her cook books and I shall look to see if I can find the recipe, but I shall keep yours anyway.
