Guest guest Posted January 4, 2007 Report Share Posted January 4, 2007 1 10" pie crust w/ whole wheat or white flour 1 t. butter 1 1/2 c. chopped onion 2 c. cooked fiddleheads (wash and trim, boil for 10 minutes) 1/2 t. salt pinch of black pepper pinch of thyme 1/2 t. dry mustard 3 eggs 1 c. flour 2 T. flour 1 1/2 c. grated cheese (swiss, cheddar, or feta are good) Preheat oven to 375 degrees. Melt butter in a small saucepan, add onions and saute for a few minutes until softened. Chop cooked fiddleheads into bite-sized pieces, and add to onions along with spices. Saute 3-4 minutes more. Combine eggs, flour and milk in a food processor. Spread cheese on the bottom of the pie crust, then add the vegetables on top. Pour milk and egg mixture over the top.
