I adore brown eggs! I know they are not supposed to be any more healthy than white eggs, but the soft color and golden yolks just make me FEEL healthier, lolol. Ellen, you're lucky your hens are still laying. I remember when I lived in PA, my friends would complain that their hens stopped laying in the winter. What great recipes do you create with the eggs? The whitest one is the duck egg. The brown is from our Rhode Island Red hen (chicken). The whitish/pinkish are from our Leghorn hen (chicken). I'm still getting 3-5 eggs a day. You wouldn't BELIEVE how many people I run into who have chickens in their yards! Not to mention peacocks, pigs, goats, sheep, miniature horses, etc. All in the suburbs... I cannot have it as it also contains sugars. Disheartening! I'm single with not a lot of social activity. I rarely eat breakfast and lunch is not a big deal. But like many older singles I look forward to having something good to eat at the supper meal, one of my few simple pleasures. If I am not diabetic or overweight or suffering from another disease that has problems with sugar, then there is no reason I cannot enjoy honey or maple or some other type of minimally processed sweetener. If I do not have issues with dairy products, there is no reason I cannot enjoy milk or butter. For me, oats are healthy and I enjoy them with stevia since I cannot have sugars. For my children who are on gluten free diets, oats are not healthy & they have cream of rice with honey or maple syrup. I am on a very restrictive diet and find lots of things that I enjoy eating.... fresh strawberries, hot buttered popcorn, ice cold lemonade with stevia, etc. It's all perspective in my mind.Ellen LaFleche-Christian Lilac Hill Homestead / Vermont http://tinyurl.com/lpfaf Do You ? People with cholesterol problems and cardio-vascular disease are generally advised to eat like a diabetic--3 meals a day and two small snacks. Why? Skipping meals actually slows your metabolism causing weight gain, and indirectly contributes to plaque build-up in the arteries. My ex, after a life time of skipping breakfast and lunch and eating a huge fast-food dinner (he wouldn't eat anything healthy that I made!) learned to eat something small for both meals and to carry apples and fruit with him for snacks. Have you thought about eating something tiny like a piece of fruit for breakfast, or whole grain toast or a small bowl of cereal? I know some people just don't like breakfast, but I think even a glass of orange juice might help! I could just see myself raising a chicken from a chick and having her come when I call her name! Unfortunately, I checked and Ferndale does not allow any stock or farm animals in the city limits. WAY too urban of a community.
