No, freezing will not make the herbs lose potency. You can, if you so desire, add some alcohol to this syrup and it will act as a preservative and allow you not to have to freeze your syrup. This is what the big pharmaceutical companies do. You can also use organic apple cider vinegar instead of the alcohol but don't overdo either one. Using these will allow you to keep them in the refrigerator where you won't have to wait for it to thaw.
