Before it's asked (lol) here is one way.....

How to make Pasta from scratch. Like many of you, I enjoy pasta. And like many of you, I do not like the store bought dried pasta. I disliked it so much that I went out and bought a pasta machine to aid me in my quest for perfect pasta. Now, there are several recipes that you can choose from to make pasta. There are as many pasta's types as there are Italian cooks. Below I have listed my personal favorite recipe for pasta. If you want some different types, then try searching the 'Net for some different ones. Traditional Pasta Dough:

2 1/3 cups All Purpose Flour3 eggs1 Tbsp Olive Oil½ tsp. Salt 1 Tbsp. Water (if necessary)

Sift flour onto work surface. Work flour into a mound, and make a hollow in the middle. Break eggs into the hollow. Add the olive oil and the salt. Use a fork and mix the ingredients in the hollow together. Then slowly work the flour into the hollow. Gradually work more of the flour into the hollow until a viscous paste begins to form. Then use both hands and work the rest of the flour into the center. If the paste does not absorb all of the flour, add a tablespoon of water. Work in the water with both hands and fold in the rest of the flour. Push out the ball or dough with the heels of your hands and then shape into a ball again. Repeat until it has a firm but slightly elastic consistency to it. Cover with plastic wrap and let it set for about an hour. Roll flat and cut into desired noodle shapes, then boil. Then Enjoy!
