Thanks Richard, If you choose to dry your root, it is often suggested to use an oven > at 150 degrees due to eggs and critters from the soil that may show > up during storage. I really appreciate the above part. I've had enough of critters for a while. The last 3 times I bought watercress from the market(3 different ones) they had little sluggy snails in them. I thought the last batch was ok and soaking them for an hour might do. But as I was munching on them throughout the afternoon. CRACKKK! I spit it out all over the counter.
