Fruit sugar (fructose) and table sugar (sucrose) are other pro-oxidants. Too much of any of the simple sugars at any time increases the fire too much. We get antsy, energetic, and hyper, and the body releases control mechanisms to dampen the excessive fire, partly by turning excess sugars into saturated fats which slow the fire down. (If high cholesterol, something is causing higher levels of LDL, and sugar appears to a major contributor) In Ch 6, The Sugar-Fat Connection, Udo Erasmus explains the mechanisms how sugars and starches can keep us healthy and make us sick, can even kill us.
