How many lemons does it take to cover an egg? say in a normal 8 oz glass... I think I am going to cut the lemon rinds off and put in a blender - any ideas on this? Guest guest Posted February 2, 2002 Report Share Posted February 2, 2002 The lemon rinds will cut back on the acidity of the juice which you don't want. Save the rinds and then grind into a powder for one of the best sources of Vit C. Best is to stick with a wide mouth mason jar. Place 5 or 6 organic eggs into the jar (do not fill to the top as it should only fill the jar about 3/4), and then add the lemon juice so that it covers the eggs by about an inch. You'll use 5 or 6 lemons depending on their size. Get the idea that no two eggs are the same in size, and the same goes for lemons so just make sure that the eggs are covered with about an inch of the juice. T'ain't rocket science so don't worry about screwing up. The only way to do that would be to shake the mixture too hard and you break the membrane of the egg. Just gently swirl your mixture 3 or 4 times a day and DON'T leave it in the fridge for more than 48 hours.
