Guest guest Posted October 9, 2001 Report Share Posted October 9, 2001 Here you go Doc, Date Cookies 1 cup chopped dates or raisins Boiling water 1 egg 2 tsp. honey 3/4 cup whoe wheat flour 3/4 cup oat flour 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. nutmeg 1 cup mashed bananas 1/2 cup finely chopped nuts--optional Pour the boiling water over the raisins/dates let stand for 5 minutes then drain well. Cream 3/4 cup butter then add the egg and honey, mix well Combine in a separate bowl, the flours, baking soda, and spices. Add the mashed banana to the butter mixture and mix well. Fold in the 'wet' mixture into the dry mixture, add nuts if desired, add the raisins/dates. Preheat the oven to 350 degrees and Drop the cookie dough onto greased pans. Bake for 10-12 minutes. Tahini Honey Sesame Seeds Oats Sunflower seeds A sprinkle of sea salt Mix together and bake until the bottom of the cookies are cooked. I used to buy them at the food co-op, and decided that I could make them. Sorry about not having the measurements. I used to mix the honey and tahini together, and then add the rest. You can add raisins and other things. But I loved them plain. Of course, there are the 'no bake' kind that I whip up with my kids. They take them as snacks or eat them for breakfast: 1/2 cup honey 1/2 cup nut butters (I like almond and hazlenut) 1 cup oats 1 cup dried milk (I use better than milk non-dairy dry, made from soy) Mix together and roll into balls. Do you (or anyone else out there) have any cookie recipes that are healthy and can be rolled out for cookie cutter use? I have some cute Halloween cookie cutters that I wanted to use but don't have a healthy cookie recipe to make for this purpose. Any ideas anyone?
