Kefir culture is pickier than yogurt and doesn't like to get cold. Mine worked great, with a friend's goat milk, in hot weather in August and once the weather cooled down it didn't. Kombucha I only like when it is the first wonderful fizzy glass fresh from the "mushroom". The last time I had a culture I didn't treat it with enough respect. I kept getting small bits of mold so I gave up. I might start again some time. Please do not spend money on ready-made products of either! Splurge on a good culture and then save big time making your own. Forget the word: "dosage'! These are FOODS, not medicine! Sally Enig's wonderful book "Nourishing Traditions" has a whole chapter on fermented foods. If you only buy one cookbook in your life, get that one!
