wheat free chapatti recipe?

Hello Group Members -

 

Does anyone have a good recipe for wheat free chapattis? We have one with

Sorghum flour though challenging to make, and would like to have another option

to share with clients.

 

For our INdian friends who may not know, many here find or believe themselves to

be allergic to wheat and avoid it. Actually, for some it is particularly the

whole wheat outer husk; for others the gluten. Agni another factor. Some say

it is how the wheat is cured or whether organic or not. Much discussion!

soul - a guide to vedic cooking. "

 

Spelt Flatbread with Ghee

 

Ingredients:

 

1 cup organic spelt flour

 

¼ cup water

 

½ tsp salt

 

1 tbsp oil

 

Ghee or smearing

 

 

 

Preparation:

 

Place the flour and salt in a mixing bowl and add the water slowly. Mix with

your hands till dough is formed. Once the dough ball comes together, add the oil

and knead it for about 4 minutes. Cover the bowl and let it rest for 20 minutes.

Heat a cast iron skillet. In the meanwhile, make a 2 inch ball of the dough and

roll it out into a thin and even disk about 4-5 inches in diameter. Cook on the

griddle till it begins to puff up gently. Turn over and cook on the other side.

Place the bread in a container with a lid and drizzle about one tsp of ghee on

the flatbread. Keep it covered so they remain soft. Continue with the e dough

till all breads are cooked. Yield - 6

Ysha, Michelle taught a wheat, yeast and gluten free chapati recipe in her

cooking classes last year...here is the recipe

1 c besan/ chickpea flour2 T arrowroot powder1/3 c unsweetened shredded

coconut1/2 t mineral salt1/2 t whole toasted cumin seeds1 pinch hing1/3 c water1

T ghee or coconut oil (melted)

Mix dry ingredients together in a large bowl. Add ghee or oil and enough water

to create a dough that is soft and hold together. Divide dough into 2 " balls and

roll flat and thin on a well-floured board. Heat skillet & brush with ghee or

oil and cook each round until it looks dry. Flip over and cook for w=equal

amount of time on the other side. Remove from heat, brush with add. ghee/oil and

serve warm.

dear ysha:

maybe it can be illuminated for people that one of the main reasons people

develop " allergies " to certain foods is because of poor digestion. and one of

the reasons for poor digestion is improper food combining.

 

the besan chapati sounds good, but it is vata aggravating, so maybe some fresh

ginger might help with that.

I use Whole White wheat organic flour from King Arthur Flour for my

chapattis.My son is allergic to regular wheat found here.

This is interesting - I'd heard also that the English have some way of I believe

it is harvesting and aging the flour which makes a big difference. I wasn't

sure about this brand though felt called to it. It does not say organic, which

was a holdback. Perhaps as your son handles this one and not the others, it

reflects the wisdom in handling the flour before it comes to the market. I'll

be using the unbleached however, as it is the whole wheat external parts which

create problems for me.

 

Aparna - it was interesting to me watching a consult with Dr. Shrestha for a

young boy which wheat allergies and other problems. Parents were sitting in,

and amazed at her recommendation to begin introducing wheat a tablespoon at a

time in some form, in a month or more after all systems had settled down and he

was on her recommended routine. Definitely her focus was on settling the

body's tendency to allergy from aggravated agnis and ama.

ysha, that makes total sense and i would imagine that introducing or in some

cases, re-introducing small amounts of dairy would be a good way to get the body

used to it.

 

i think it also helps a great deal to educate folks about the wisdom of food

combining. and strengthening vishamagni or madagni.

believe it is harvesting and aging the flour which makes a big difference. I

wasn't sure about this brand though felt called to it. It does not say organic,

which was a holdback. Perhaps as your son handles this one and not the others,

it reflects the wisdom in handling the flour before it comes to the market. I'll

be using the unbleached however, as it is the whole wheat external parts which

there was a post earlier about women with low thyroid and babies being born

turned around. I remembered that my granddaughter was born face up. She is 15

now and her mom recently tested out low for thyroid and is not on meds and feels

so much better. Would that baby have a low thyroid also?

Another important fact I forgot to add is that I have started to add a tbsp or

two of castor oil (Heritage Organic) when I am kneading the dough.I have noticed

a huuuuuuge difference in all our digestion with that.Traditionally when wheat

was stored in India, every summer I remember my mum oiling the the whole barrel

of wheat with castor oil. She called it " making the wheat drink the castor oil " .

When I was growing up no one had wheat allergies even though we ate wheat every

single day sometimes more than twice a day.

Ysha the King Arthur flours are unbleached, unbromated etc all the good stuff.

Hi Vaishali and All -

 

I tried this recipe with a Tbs castor oil in 2 cups unbleached King Arthur Flour

and 1 cup organic barley flour. It is not gluten free of course. It did make

very nice, no castor oil tasting chapatti, with much more fiber than just

unbleached flour. Works for me! I'll still have to find a gluten free version

I'm happy with. Spelt also has gluten, and seems to upset my tummy a little for

some reason. I don't like to use the mixes with all kinds of flours, both

potato and grain, so the choices are more limited.
