Nourishing horchata recipes and barley beverage

Hi Patti!

This is wonderful. Just goes to show how much I use even my favorite

cookbooks! Meriam has done some good homework for this; I spent a

long time sorting through horchata recipes on the internet and wasn't

so rewarded. But I am changing the subject heading...this isn't about

infant formula really, though the barley flour recipe may be

transferrable. CHinese use roasted barley tea for infant supplement

(not for formula). Perhaps it can be adapted, but that is beyond my

knowhow.

 

Barley is an interesting grain; more astringent and drying than wheat

or oats, or rice. But with its slimy quality (perhaps the combo of

the fibers, EFAs and other fats? it seems to self balance, sometimes.

It doesn't feel as grounding and nourishing in some ways, in other

ways it is very filling. I'm happy to know about the lysine content

too. WE use it with the mothers in soups of course, and when they are

not feeling so well and we want to lighten the foods but still nourish

well.

 

THese are appealing; I am looking at them also for postpartum mothers.

Not having tried the soaked rice blended in hot water recipe, I

wonder how it handles for high vata - are you familiar with it?
