She had asked me to speak there, and we met at MANA Boulder. I'm pulling back on travel a good bit, but here's the shortbread cookie recipe requested, along with an invite to join our group. Everyone loved the samples we gave out at MANA We offer this to our moms after the first couple weeks postpartum (with a cup of hot tea or milk!). 1 cup organic butter 1 cup organic raw sugar (Susan used light but it is excellent with succanat too) 2.5 cups unbleached organic wheat flour (not the whole wheat at this time; can use barley or oat flour also, others don't hold together so well due to lower gluten as well as low moisture. For gluten free, you can hydrate about 1/4 to 1/2 cup of tapioca or amaranth flour or boil/thicken some ground flax to use along with rice, quinoa or acorn flours) Avoid soy, corn, millet, buckwheat, brown rice, potato as much as possible during this time due to scraping, drying and more astringent (potato) qualities on tender innards. 1 tsp freshly ground cardamom powder 1/4 tsp nutmeg if not constipated (opt 1/4 tsp ginger) pinch salt. Opt 1/4 cup water or milk (avoid salt with) for moisture Opt a few chopped nuts Mix together well, creaming the butter and sugar first with spices. Press into a pan and bake at 300 degrees for 25 - 30 miniutes. Easy, nutrient dense in some of the ways postpartum needs (higher intake of fats and carbs, and digestive support together) Enjoy with hot tea or hot milk; the high fat content keeps this from being very drying, as does the warm liquid - these are 3 of the postpartum dietary keys. IE, Warm, oily, and moist. In the first few days, puddings (not chocolate, not with egg) such as rice or tapioca are better. VERY moist, warm, and be sure to add butter to the recipes!
