Spinach and mung soup recipe

Greetings to all my name is Sonya and I am an ayurdoula in Boulder

I just joined this group. I am looking for a date rolled coconut

recipe for postpartum. My client says she had it from another

ayurdoula and loved it. Also I made a great soup today I would like

to share with you.

11/2 c. whole mung

2 bunches spinach

2 cloves garlic

1tsp. cumin seed not ground

1/2 tsp. ground coriander

1/4 tsp. ground time

1 tsp. salt

fresh ground pepper to taste

about 7-8 c. water

opt. 2 tbls. cream cheese or try coconut milk.

Cook the mung beans until soft and starting to fall apart. While

beans are cooking heat about 2 tbls. ghee in skillet and add the

garlic and cumin then add rest of herbs and add to beans. When

beans are at the falling apart point add spinach and pepper. I

added some cream cheese but it is very good without it too. Puree

all and serve with lemon or lime wedges. You may need to add more

water as you puree it.

Yum! I've also had excellent results with a little cream cheese in a

soup or dhal. Is it ok to post the client's name? Perhaps we can

track the special recipe down for her...

 

I have some favorite ways to serve dates after the first few weeks

postpartum, making sure they aren't cold from the fridge ...

1. Stuffed!

mixing a little flax oil in cream cheese or nut butter, simply almost

halve them and sprinkle with cardamom.

 

2. Sauteed in ghee!

Gently saute about 5 smaller dates or 2-3 medjools in a tsp ghee, add

2 pinches black pepper and serve warm.

 

This second recipe we all like is from Dr.Lad and his wife Usha's

cookbook, which is recommended also for malabsorptoin in a special use

(5 - 6AM in the am no liquid or food for 1 - 2 hours before or after).

 

There is a tradition in Some parts of India Iearned about this year

from both Sarita and from an Indian client, no recipe to share and I'd

like to know the weeks postpartum when they introduce it. Actually,

Sarita recommended dried fruits (cooked) over fresh the first few days

or 2 weeks, for their ore concentrated nutrition and value to the

muscle tissue (mamsa dhatur) specificity. Including uterine, I would

suppose.

 

2 weeks ago I gave an all day class to a client couple who live 2

hours from here; he is Phhillipino and loves to cook, and they have

expanded palette, wanting variety. We (with 2 interns helping as well

as the couple) made 22 preparations, including a wonderful adaptation

on a sweet/sour carrot/seaweed dish.
