Eat vegetables both raw and cooked. Many studies identify raw

vegetables as more anticancer.

However, this is not always true with foods high in betacarotene. A

little heat changes the form of betacarotene so it is more easily

absorbed. thus, you are likely to absorb more beta carotene from

lightly cooked vegetables than raw ones, says researcher John

Erdman, Jr. Ph.D. at the University of Illinois in Urbana.

 

Nor are certain other important anticancer carotenoids like lutein

in green leafy vegetables harmed by heat.

 

On the other hand, several fragile anticancer agents, including

indoles and vitamin C in vegetables are destroyed by heat.

 

That's why you should also eat LOTS of raw green leafy vegetables,

such as spinach, broccoli and raw cruciferous vegetables, such as

cauliflower and cabbage. When you do cook them, do it gently and

quickly to preserve the greatest health benefits.

 

Toxicologist Herbert Pierson Ph.D. calls citrus fruits a total

anticancer package, because they possess every class of natural

substances (carotenoids, flavonoids, terpenes, limonoids and

coumarins) that individually have neutralized powerful chemical

carcinogens in animals.

 

Dr. Pierson says: " The beauty of citrus is that several classes of

phytochemicals are highly likely to act more powerfully...as a

natural mixture than when they appear separately. " In other words,

whole citrus fruits are a marvelous cocktail of anticancer

compounds. One is the powerful antioxidant glutathione.

 

Whole oranges contain high concentrations of this tested disease

antagonist. However, when extracted the juice tends to lose

glutathione concentrations.Oranges are the highest of all foods by

far in glucarate, another cancer-inhibitor.

 

Soybeans are the richest source of protease inhibitors, which in animals totally

block or hinder the developement of cancer.Two soybean

constituents--phytosterols and saponins--are strongly anticancer. In animals

phytosterols help squelch cancer by inhibiting cell division and proliferation.

Saponins can stimulate immunity, directly slay certain cancer cells, slow the

growth of cancerous cells and can reverse the proliferation of cancerous cells!

 

Not surprisingly, the Japanese with low rates of cancer, eat five times more of

these cancer fighters than we do. Our typical western diet yields 80 mgs of

phytosterols each day; the Japanese typically eat 400 mgs daily.Soybean

compounds also block the formation of one of the world's most dreaded

carcinogens--nitrosamines, which can lead to liver cancer. In fact, soy

substances did the job better than vitamin C, which is put into cured meats

explicitly to inhibit nitrosamines.

 

Foods that may encourage Cancer spread:

hydrogenated oils

margarines

fried foods

Pizza

cookies

Refined sugar

Refined table salt

Polyunsaturated vegetable oils high in omega-6, such as corn oil.

Alcohol

High-fat foods

Red Meats (estrogen and dioxin content)

smoked cured meats

No traditional Dairy of any kind, including cheeses

No coffee or caffeinated beverages

No alcoholic beverages

 

There is much negative press about Soy these days, however you will

find that most cancer survivors have used Organic Soy products

prolifically! Apparently, Organic Soy products are not implicated.
