It seems to protect against heart disease and is associated with low cancer incidence and overall good health! Olive Oil is high in mono-unsaturated and unsaturated fatty acids that protect our body's cells from MUTATION, that is if it is virgin or extra virgin olive oil. Virgin olive oils are the only mass marketed oils that have not been heated above 150 degrees C. (302 degrees F). When oils are heated higher than this they not only lose their protective effects but they become damaging to the body! Refined oils are heated at much higher temperature that creates compromised oils. Furthermore, in processing oils, they use poisonous solvents (Hexane- a cousin to gasoline) to extract the oil left behind after pressing. They degum the oils with Phosphoric Acid (an extremely Caustic Chemical) which removes several health promoting substances such as lecithin, chlorophyll and other trace minerals. The oils are then bleached and deodorized with other solventizing chemicals and heated up to 270 degrees C (518 degrees F) for 30 to 60 minutes. Fully refined olive oil loses over 100 volatile compounds that gives olive oil its unique flavors and aromas. It is the lowest grade olive oil that is refined. Beware of the term " pure " olive oil on the label. Olive oil labeled as " pure " (instead of virgin) is a fully refined " solvent extracted " low-grade oil. The final product of all this is a mutated oil stripped of all it's healthy components with the loss of the nutritional integrity of the EFA's. The bottom line on buying healthy oils is to get, organically grown, cold or mechanically pressed oils that are protected from light, air, and heat! Another health benefit of olive oil is better blood sugar control. Four independent medical research centers studied 42 non-insulin dependent diabetics. Half of the group ate a diet with the traditional 55% of the calories from the carbohydrates and 30% from fat. The other half ate only 40% of calories from carbohydrates and a whopping 45% from fat, with highly mono-unsaturated olive oil as the predominant fat. The low-carb, high mono diet resulted in better diabetic control-lower day long blood levels of glucose, insulin and triglycerides! These benefits persisted throughout the 14 week study. Cholesterol and blood lipid levels were not increased! In his book, " Sunlight " , Zane Kime, M.D. espouses the benefits of sunlight in preventing cancer and promoting health. He claims skin cancer is promoted by a poor diet, particularly refined fats, oils and animal products. Recent research has tied skin cancer to a diet too high in refined omega-6 fatty acids and substantially deficient in omega- 3 fatty acids. Another medical doctor, Dr. Edward N. Siguel, M.D, Ph.D., has written a book, " Essential Fatty Acids in Health and Disease. " Dr. Siguel writes that cardiovascular disease and cancer can be prevented in many cases by controlling the intake and balance of EFA's in our diet. Siguel basically states that progressive EFA deficiency is the main contributing factor of heart failure in 25 to 30 years of poorly balanced diets. Hundreds of independent research studies have shown the disease producing effects of animal fats, trans-fats and too much refined omega 6 fatty acids. Research has also demonstrated the disease fighting effects of the unrefined omega-3 fatty acids. So now you have the basic knowledge to improve your health.
