How often is orange ruffy or swordfish truly that in the market? Quite frankly, even I can be scammed in the " southern " markets. I know my Northern fish from the sub Arctic waters, though send me to California or lower & I just do not know my filleted fish by sight nearly as well. Twenty some years ago the son of a fisherman/restaurant owner that I knew took me to the market in California & gave me quite the education. Same thing again in Hawaii, where the locals showed me the routine. Many filleted fish cannot be told by look alone, though someone in the know can certainly tell once it is cooked. When in Central & South America I simply accept as a fact that I most likely am not buying what I asked/paid for. There I am seen as a walking wallet & accept the fate. I do not consider myself in the know enough to know hundreds of species of fish for they are from regions I just have not lived/worked in. Quite frankly it is amazing how many fish mongers do NOT even know their own products & " willingly " get ripped off. Before you all get your nickers in a twist over the fish industry, how many of you have eaten kangaroo meat & never had a clue!!! How many eat genetically engineered vegitables & are clueless?!
