Guest guest Posted May 12, 2002 Report Share Posted May 12, 2002 Hi Guys, here is a wonderful recipe for Fennel & Celery soup which is good for the heart and reducing cholesterol. Serves 3 - 4 2 bulbs fennel, dived 4 sticks celery, chopped 3 tbsp olive oil 1 1/2 pints vegetable stock (UK pint = 20 oz, therefore US require 30 oz, almost 2 US pts) Juice of 1/2 lemon. Cook the fennel & celery slowly in the olive oil until soft - this may take up to 20 minutes. Add the stock, bring up to the boil, season with salt & pepper and simmer for 20 minutes. Whiz the soup until smooth and then push through a sieve (I don't do this as I like a little bulk in my soup) into a clean saucepan. Stir in the lemon juice and serve.
