Hi Joseph, Commercial oils suffer from a number of problems: 1) They are RBD (Refined, Bleached and Deodorized). This process is done with many chemicals and high heat and causes modification of the natural plant oils as well as leaving trace amounts of the processing chemicals and some metals. 2) They are rich in double bond fatty acids which can go rancid in storage, form trans fats in cooking and can be oxidized by free radicals. 3) They are about as far away from natural as you can get. Extra virgin olive oil is a natural oil and is ok for consumption on salads but it is very rich in monounsaturated fats and their single double bond which can be damaged by heat and thus it is not a good idea to fry or bake with it. In a phone call to Mary Enig in April, 1997, she told me that the worst oil to use for any purpose is Canola oil. When used in cooking, it produces the very high levels of trans fatty acids. Whether it can be handled without degrading whatever nutritional values it has to begin with, making it an oil valuable to human health, is controversial. Even virtually all the olive oil on the market, including most of the so-called extra-virgin product, is of relatively low quality. It appears that it's necessary to diligently search for a high quality virgin olive oil, and expect to pay high prices for it.
