As a shiatsu practitioner myself, my first question is did you ask your practitioner what this means? It's important that if you have not that you do. From what you describe it sounds like you may have a deficient spleen/second chakra " thingy " happening here. Again, reluctant to give to much info...PLEASE speak to your practitioner. What I could suggest is that instead of just easing off the low carb diet, try a low GI (Glycemic Index) diet instead.
