Hardly a day goes by that we don’t hear about more benefits from eating vegetables. But it’s not easy for busy people to eat as many as they should. In doing nutrition counseling with patients, I found that even people who said they like vegetables and salads only managed to eat a few servings a day. In countries where they eat more vegetables than we do and have less cancer and heart disease, they enjoy a wide variety of vegetables prepared in imaginative ways. This, of course, takes time and effort, but there’s an easy way to consume a larger quantity and variety of vegetables. In a way that’s also enjoyable. We combine vegetables such as zucchini, broccoli, spinach, shredded or diced, with an equal amount of water, simmer 5 to 10 minutes with onion, garlic, basil, salt and pepper, then put the whole thing in a blender and blend until smooth. The bulk of the vegetables produces a thick, smooth soup. You can also use a food processor and get a little coarser texture. This is a particularly good way to get strong tasting vegetables, which are particularly healthful, into children and adult males, who don’t like vegetables other than potatoes, corn, and peas. If there’s any resistance to salads, try vegetable sticks with dips.
