Lots of Humane Societies and rescue groups are in need of people to do tasks that require writing skills such as drafting letters for fundraising, compiling information to be given to new owners, creating brochures, organizing the efforts of those who have the physical ability to do the heavy work. Some organizations need someone who is actually home most of the time to answer calls concerning the animals available or explain to people how they can help, others need people to maintain their websites. Learning to build websites is not a particularly difficult task and can be very rewarding creatively as well as helping the animals find new homes. Also I have read at least one post suggesting that you take Reiki I training. Reiki can also be used on animals reducing their stress levels, so you find find a way to use it in that regard with your local shelter or humane society.
