Guest guest Posted June 25, 2001 Report Share Posted June 25, 2001 Granola Snack Bars, 2 tbs Olive Oil margarine 4 cups miniature marshmallows 1 cup rolled oats 1 cup crushed graham crackers 1 cup unground flax seed, ground 1/2 cup chopped raisins or other dried fruit 1/4 cup raw sunflower seeds, shelled 1/4 cup unsweetened fine coconut .. In a large saucepan, over low heat, melt butter. .. Add marshmallows, cook, stirring constantly until marshmallows are melted and mixture is smooth. Remove from heat. .. Stir in oats, graham crumbs, flax seed, raisins, sunflower seeds and coconut until thoroughly coated. .. Press into a greased 22 x 22 cm (9 x 9 inch) pan. .. Let cool. Sorry what I meant to say is that perhaps you could modify it to your tastes and health level. You could cut them in half & double the amount of coconut. Overall, the carbs are not that bad and the high amount of the poly fats reduces any negative effect of the high GI marshmallows. In one bowl combine: 1 C Oats 1 C Puffed Rice, preferable whole grain 3 Tbs Sesame seeds 1 Tbs Bee Pollen 3/4 C Ground Peanuts 1/2 C Ground Hazelnuts 1/2 C Ground Pumpkin seeds 1/4 C Sunflower seeds 1/2 C Raisins 1 1/2 tsp Cinnamon 1 tsp Nutmeg 1tsp Salt In another bowl mix: 1/4 C Honey 1/2 Rice Malt syrup 1/4 Maple syrup (real) 1 tsp ground vanilla or vanilla extract Mix well the ingredients in the 2 different bowls. When each separate bowl is mixed well, add the dry ingredients to the syrup/honey mixture. Stir, making sure that all of the dry ingredients are syrup-covered. Cover a cookie sheet with a piece of oven paper (not wax). Pour the mixture on the paper and spread evenly across the cookie sheet. Bake in a 375 degree oven for about 15 minutes. Remove from the oven, let cool. You will find that the granola peels right off of the paper when it's cool.
