Ya know, I used to eat a 1/2 cup of oatmeal with 2 egg whites and a

little brown sugar cooked in it. Makes your oatmeal taste more like

bread pudding. >>

 

Brandy how do you make this up?

Do you scramble the egg whites into the uncorked oatmeal and then bake?

I would love to know. I am trying to get my dh on the oatmeal and he

just hates it ! This would be a better way for him to go I. I would

think the egg whites make this a high protein energy kind of a

breakfast...a power breakfast!

This is very easy! I put 1 cup of water in a pan with 1/2 cup oatmeal

and put on the stove over heat. While it is getting ready to boil

(and this is pretty quick) I add some brown sugar (or sweetener of

choice) and sometimes a handful of raisins. When it begins to get

bubbly around the edges, throw in the 2 egg whites (you do not need

to pre-beat them...what have they ever done to you??) then stir,

stir, stir. When you see the egg whites turn white, it's done!

 

Hope he likes them!! IF you put it in the fridge you can eat it later

just like dessert. Sometimes a little soy milk poured over the top is

yummy!
