Infused oil question

HI,

I am going to infuse oil with several herbs (first time at it.) I was told to

use olive oil bec. the shelf life is long. I have Star brand olive oil. It is

extra virgin. It is dark and thick. Is that ok? OR should I get one that is

thinner in consistancy?

Olive oil can get rancid and this will darken it. I have bought Extra

Virgin Coldpressed Olive Oil from Eden and Spectrum that smelled like an LP

leak when I opened them. I have just bought them yet they were already

rancid. Does you olive oil smell fresh or old?

 

As long as it is not rancid, at least with my experience, the oil you have

will be fine. Remember, the lower the heat the longer the time you will

need to infuse the herbs, but the higher quality the herbal oil. It is easy

to heat oil too high and get fried leaves instead.

Hi Renee,

 

Not familiar with that brand so can give you no critique. I use Lorenzo's as it is simply the best I've ever tasted or used. There's another brand called "Nomad" which is also excellent but very expensive. Both of the above truly taste like real olives.
