I lived in Texas for several years, and cilantro is a MAJOR ingredient in Tex-Mex food. I really disliked it at first -- it has such a strong, musky flavor, but it's in @#$% near everything out there, so I had to get used to it. If you're trying to mask the flavor, I would suggest putting it in or with something very spicy (like hot peppers) and tomato-y. Cilantro is the main seasoning in salsa, which is a chunky, tomato and hot pepper sauce that people in the Southwest put on just about everything. The flavor of cilantro does something interesting in salsa -- it sort of mutates into something smoky and actually tasty. That is the truth- my salsa this year was unflavorful- I didn't know what I had done.... Forgot to put in the cilantro.
