Guest guest Posted January 22, 2001 Report Share Posted January 22, 2001 Hi everyone, wanted to share a recipe I found and have used for pancakes- My family loves them and I wanted to make them healthier. These are easy and I plan to experiment a little with them. Blender pancakes 1 egg optional- I left it out 1 tab. olive oil 1 tea. vanilla-(helps make them sweet without adding a sweetener) 1 cup rolled oats( other alternatives below) 1 to1 3/4 cups of liquid( fruit juice,water, dairy alternatives or buttermilk) 1 tab. flax seeds Place all in blender- blend until smooth- about 5 minutes ( with vitamix- may be shorter) Right before cooking add the following in a small bowl 1/4 baking soda 1/2 salt ( I used 1/4 tea. sea salt) 1 tea. baking powder( low sodium- from health food store.) Pour all into blender- mix a few minutes to mix and cook pancakes. Alternatives: Brown Rice buckwheat ( raw, sprouted or toasted) Millet Barley(hulled not pearled( reduce to 1/2 to 1 cup) Oats (rolled or whole- cook a bit longer) corn(dry whole) Kamut, spelt Wheat Add 2/3 cup to 1 1/2 cups of these grain to get a thin pancake like batter. I had to put the brown Rice in frig over night to get smooth batter- and had to let oats set a little while and then blend again. I love this recipe because it can be whatever you want it to be.
