In a cool dark place. Not necessarily the fridge unless you are in a Florida summer (grin). According to the sites and info I have read, the Tea should be ready in about two weeks. I find that the Kombucha tea made with Blacke Tea is nicest if I leave it for a month. I just thought it was suppossed to ferment 1st. URRGGG!
