ELDERBERRY WINE Put a quart of water (may add more if berries are dry – just enough to bring juice out) in bottom of pan. Bring to boil. Wash off berries while in bunches. Pick off berries and put in kettle with water. Mash berries. Bring to boil – 5 minutes. Strain juice. To each gallon of juice add three pounds of sugar and ¼ oz crème of tartar (removes impurities). Boil for one half hour. Skim. To every three gallons of juice add one pound of raisins – while hot. When cool, place in barrel and float two yeast cakes on a slice of toast. Set barrel in warm place. Stir every day. After three days take toast off. Let ferment ten days. Strain, siphon and bottle. Take good care.
