From what I know, raw apple cider vinegar is a good choice because it has not been heat processed and still contains what is known as the "mother". This is where all the healing and nutrient properties are in. Because there are no sugars in it, bacteria do not grow and the heat process is unneeded. It is actually recommended to add a cup to a horses water to keep it healthy. (You can also add it to the food). It is said that no known pathogens can survive in it. Cool Stuff. We filled our 5 gallon crock with the leftovers or by products- stuff you normally waste- cover with cold water and cover. We would put it in a warm place and every so often put more peels when we made pie.Strain off the froth on the top as you go along. When it smells and taste like vinegar- we would strain it and put in sterilized jars and put the lid on. We stored it in our pantry which was cool and dark. Depending on sugar content of apples and ripeness and warmth depends on the amount of time. We had vinegar as soon as 4 weeks and up 12 week. It has no toxins in it so it is preffered to God knows what in regular vinegar. I use it in foods, my hair, cleaning, poultice's & skin, etc. Vinegar is "The Mother". It is excellent for so many things. Organic is a given if you want to keep away from toxins.
