Guest guest Posted November 21, 2000 Report Share Posted November 21, 2000 Happy thanksgiving to all who celebrate this holiday> I have been busy cooking today and trying to find ways to bake healthy- is it possible? I have found a terrific pie recipe and want to share. This pie is quick,easy and yummy!! Husband requested I make two for him to take to work> He is my sweet eater- if it's sweet he eats it! Here's the pie: Apple Pie3/4 Large granny smith apples- peeled and sliced Put 2 tab. fresh lemon juice, 1/8 tea. Stevia, 1/2 tea. cinnamon on apples,1/2 cup chopped walnuts and toss. set aside. Make your favorite crust and bake until golden brown. 1/2 cup finely chopped onions and 2 tab. unsalted butter - cook in a skillet until brown and carmilized.(about 10 minutes). Add Apple mix to skillet- cook until apples are tender.( about 5/10 minutes depending on how thin apples are) Once Apples are tender add 1/2 cup kefir or buttermilk( I used buttermilk)and 1/4 cup cold water with 1 tab. cornstarch. Cook until thickened.Place in pie pan and sprinkle with more chopped nuts- brown under broiler for a minute or two. Cool.( it thickens up as it cools- not as solid as regular apple pie) Let me know if anyone tries this- I find it to be very tasty- I am lucky in the fact my family will eat anything I cook. Again- Happy Thanksgiving. ( when I first made this pie- I didn't have Stevia and used 1 Tab. of white sugar instead- It still tasted good and used a lot less sugar then regular Apple pie) Anyone have a reduced pumpkin pie recipe?
