For those inthe Northern Hemisphere this is an ideal " Winter Soup " . One

could make a batch, freeze it and use as a base for all the winter

soups. It is a previous post from Dr. Ian that I thought appropriate to

the cold weather ...Love PEnny (well - it's at 65 degrees F down here in

Florida and I've got a sweater on)

It also stands alone as a great Potassium builder. Furthermore, it

even tastes good.

One 5 gallon stainless steel pot with lid (do not use aluminum ever!)

10 lbs. of organic potatoes

(try to find ones without eyes that are growing. Your husband or a

friend may want to make potato salad, mashed potatoes etc. You

will only use the peels (3/8 of an inch thick) in the broth.)

10 lbs of organic carrots

(Again only the peels (3/8 of an in. thick) go into the broth. The

carrots themselves may be stored in plastic bags in the fridge and

juiced.) or feed 'em to your bunny.

1 bunch of organic beets (with fresh greens attached if possible)

3 or 4 good sized beets should be enough

5 large organic onions (yellow or white - I like the yellow onions)

7 bulbs of organic garlic = approximately 50 cloves (5 bulbs for

broth & 2 for flush)

1 bunch of organic celery

Beet greens if you have them or if no beet greens - 1 bunch of

spinach or chard

1 bunch of Kale

6 gallons of distilled water (plus /minus)

1-2 of the hottest peppers you can find

2 -Scotch bonnet is hot. 1 - Habenero is 300,000 heat units

1 lb of Ginger

Boil everything is a big pot for about 1 - 2 hours. Strain and

drink the broth....Delicious!!!!!
