Guest guest
Hi Teddy, I hope you are doing well. >seems my whole grain loaves are flat and hard as bricks. When you make WW bread in your bread maker try using 1Tbs lecithin OR 1-500mg vitamin C Tablet crushed. If your bread is still too heavy use both. The general rule of thumb in making WW bread by hand is to use 1TBS of lecithin AND 1 - 500 mg tab of vitamin C per loaf, but I have found in using a bread machine you want to try one or the other and then both if need be. They both act as dough conditioners and are like super nutrition for the yeast. >When you can type comfortably again, I would LOVE some help in breadmaking! It will be a long while before I will be able to use my hand again, so if you don't mind my taking a while I would be happy to help. >I would like to make something whole wheat, and preferably vegan (no milk or eggs). I have a whole handout that I could send as an attachment off list (so as not to clutter up the list) if you wanted to email me privately. appreciated, and I do have a Vita-Mix machine that claims to be able to make flour if fresh-ground grain helps Your vitamix grinds great flour, but I don't use mine to make the bread as it can tear the gluten and damage all of your hard work. Yours, Kim ______________________
