Old Time Horehound Candy. 2cups of fresh stems,flowers and leaves or 1 cup dry. 2 1/2 quarts of water 3cups brown sugar ( honey doesn't work) 1/2 cup corn syrup 1 tea. cream of tartar 1 tea. butter 1 sprig of lemon balm ( 1tea. lemon juice) Cover horehound with water. Bring to boil,then simmer 10 min.Strain thur cheesecloth and let settle.Put to cup in lg. pan. Add, brown sugar,corn syrup and cream of tartar. Boil stirring often until reaches 249 degrees add butter.Continue to boil until reaches 300 degrees.Remove from heat and add lemon juice.(if using lemon balm add to horehound at beginning).Pour into a buttered 8 inch square pan.As candy cools score into squares.Remove from pan when candy is cooled. These help with a sore thoart-not so much with cough.
