In your blender put Extra Virgin Olive oil (4 parts) and fresh squeezed lemon juice (1 part), add about 7 cloves of garlic, 1/4 onion, celtic sea salt (optional), 1/4 teaspoon of cayenne pepper and two (0r one) cups of fresh herbs (all the rest except the mints). You can vary all the above quantities according to taste Blend into a puree in your Blender.. use on Rice, salads, baked potatoes, fresh sprouts, Feta Cheese, fish etc. This is one of the healthiest " tonics " you can give your family..and so simple......Love Penny (P.S. You should be able to grow thyme, Rosemary and Sage oficianalis in Wales - these would make great additions and I will send you the formula for a great deodorant using sage...) I would suggest drying the leaves by hanging upside down with a paper bag over them in a warm air circulating room. You can use them in so many drinks in the winter. they have great kidney cleansing and stomach settleing properties. In the summer, combine a bruised mint leaf and a half a strawberry into an ice cube and use in summer drinks. Delightful. Agood summer drink to make if you have a juicer is Weed Juice with Pineapple: - (you can omit ingredients that you can't find) Mint,(any kind or all of them) Alfalfa Dandelion leaves (young ones) Parsley Celery Tops Carrot Tops 2 cups of pineapple juice Combine handfuls and extract the juice from the herbs. Use 1 cup of herbs juice to 2 cups of pineapple juice. Golden SAGe Pity it isn't Sage Officianalis. I would have suggested my favourite deodorant to be made out of it. But Golden Sage....this has a very mild flavour. I presume you bought it because of it s pretty leaves? I think we could use it for a SAGE CAYENNE GARGLE and for Sage TEA Steep a handful of the sage leaves in a pint of boiling water. Steep for twenty to thirty minutes. Strain the leaves. Either warm up and drink with honey as a herb tea OR For a gargle to avert a cold:- 1/2 pint sage tea 2 tablespoons unboiled honey 2 tablespoons salt 2 tablespoons vinegar (apple cider) 1 tablespoon cayenne pepper Take 1 teaspoon at a time. Combine al the ingredients in a bottle. Close. Label. Shake bottle every day for about a week. Gargle when you feel a cold coming on...or have a sore throat... LAVENDER The flowers of This one dried upside down in a brown paper bag will give you lots of smelly flowers to put in your linen closet to drive away the moths. TO RESTORE THE ACID MANTLE ON THE SKIN AND RESTORE BODY ENERGY Add a handful of lavender flowers to 2 cups of white vinegar. Add 6 cups of rose water. Add a handful of rose petals or jasmine petals.(make sure that all flowers are dry) Put in a jar with a lid. Let the flowers steep for a week. Shake and turn the liquid each day. After a week or so, Strain off the flowers Put into a really pretty bottle with a pretty label. Splash on the skin. It restores the acid mantle and the energy of the skin.Gives the skin a glow. excellent for an oily skin. (Also makes a great present) ROSEMARY This herb is one of the greatest English Herbs.It is an antiseptic, a gentle stimulant to the entire body, a headache dispenser and a folk medicine hert tonic. For all of the above - use as a Tonic Tea. Make as you would anormal tea. Use Honey to sweeten. A TONIC WINE 1 pint of Madeira wine 1 sprig of wormwood 1 sprig of Rosemary 1 small bruised nutmeg 1 inch bruised ginger root 1 inch bruised cinnamon bark 12 large Organic Raisins. Pour off about an ounce of the wine. Place herbs in the wine. Cork the bottle tightly. Place in a cool dark place ofr a week or two. Strain off the herbs. Combine this medicated wine with 1 pint of fresh Madeira. Mix thoroughly. sip small amounts at a time when needed for flu or any debilitating illness. Rosemary Wine 1 Bottle white wine 1 handful fresh rosemary leaves or 2 tablespoons dried leaves 2 tablespoons borage leaves. Prepare as above. this lifts the spirits from a mild depression and quietens the nerves. Marjoram or Oregano Use on pizza's, chew a leaf to help with toothache. It has anti-oxidants and is loaded with antiseptic compounds. Healing OIl Put Marjoram and thyme in an oil (olive oil, almond oil, avocado oil, coconut oiletc.,)and use the mixture on sore muscles. back ache, arthritus, sprains and bruises.(You can use the golden lemon thyme for this) How you actually put the mixture into the oil depends. I use coconut oil. I shove the fresh dry herbs in the oil in the screw top glass jar that the coconut oil comes in and put it near the pilot light on my gas stove. After about a week, I strain out the herbs. (this is a messy bit and you do loose some of the oil - I leave it overnight to drain.) then, I do it again.More herbs and leave it a week. I find I end up with about 2/3rds of the coconut oil with a greenish tinge. I slather that on the body when needed.. Coconut oil stays on the outside of the skin and acts as a protective layer more than olive oil. Many herbalists put their oil in the sun to let the sun work on it. Others bring their oil to a boil with the herbs in it. I choose the easiest way....... Other herbs can be used. If you use comfrey, make sure the skin is VERY clean before you apply the oil. THYME Make as an ordinary tincture with Vodka and use for diarrhea or as an expectorant in chest infections.Or make a pot of Tea (an infusion) to handle them. But it makes a simple and easy cough syrup. Make a pot of tea with about a handful of thyme Strain out the thyme when the tea is cool. Heat 500 ml (about two cups) of the strained tea and 500 gram (16 oz -1lb) of honey and stir until all is dissolved and is one liquid. Don't boil it. Cool it and pour into an interesting amber or dark green bottle. Use a cork stopper in case the mixture ferments - and then the cork will pop out instead of the bottle exploding. In any recipe, or tea or tincture, the addition of cayenne pepper will make the ingredients work better. However, if your family is not use to " hot " herbs, only add a few grains. Thyme, especially is a good herb to combine with others and works better when combined, then on it's own. So, with this cough syrup - you could always add one of the mints or some rosemary or some cayenne pepper....
